For those needing to be gluten-free, I have seen almond cake recipes that use about 200g of almond meal/flour, and six eggs or so. Such a treat! I’ve also served it successfully with quick-candied cherries or poached pears with chocolate sauce. Then mix 50% almond meal with 50% confectioner’s sugar, and add a few drops almond extract, and a LITTLE water, 1 tablespoon at a time.
